    Prepare the chicken: Pat the chicken dry. If the breasts are thick, butterfly or pound them to an even ½–¾ inch (1.3–2 cm) thickness. Season both sides with salt, black pepper, Italian seasoning, and garlic powder, if using. Lightly coat with flour, if using, shaking off the excess.

    Sear: Heat the olive oil and butter in a large skillet over medium-high heat. Add the chicken and cook for approximately 4–6 minutes per side, depending on thickness, until golden and the thickest part reaches 165°F (74°C). Transfer to a plate.

    Cook the garlic: Reduce the heat to medium. Add the garlic and red pepper flakes, if using. Cook for about 20–30 seconds, stirring constantly, until fragrant without letting the garlic brown.

    Deglaze: Pour in the chicken stock and scrape the browned bits from the bottom of the skillet. Simmer for 1–2 minutes to reduce slightly.
