Ingredients

  • 2 large eggs
  • 1 teaspoon mayonnaise
  • 2 tablespoons grated Parmesan cheese
  • 1 rice paper (8 inches)
  • 1 teaspoon chili crisp sauce
  • 2 tablespoons shredded part-skim mozzarella cheese
  • 1 bacon strip, cooked and crumbled
  • 1/4 cup fresh baby spinach

Instructions

  1. 1 In a small bowl, whisk together the eggs and mayonnaise until smooth and then set aside. Sprinkle the grated Parmesan into an even layer in a cold skillet, then place the rice paper on top. Editor’s Tip: Starting with a cold skillet helps the Parmesan melt slowly and form a crisp, golden layer under the rice paper as it cooks. Drizzle the rice paper with chili crisp sauce. Pour the egg mixture over the rice paper, gently spreading it to the edges.
  2. 2 Place the skillet over medium-high heat and cook until the eggs are mostly set. Sprinkle the shredded mozzarella, crumbled bacon and spinach on top of the eggs. Continue cooking until the cheese melts and the bottom of the rice paper is crisp and lightly golden.
  3. 3 Using a spatula, carefully fold the rice paper pizza in half. Slide it onto a cutting board and cut it into wedges. Serve the pizza immediately while the bottom is hot and crispy.
