    If necessary, toast the hazelnuts at 350°F (175°C) for 8–10 minutes. Cool and chop.

    Heat 60 ml heavy cream until steaming but not boiling.

    Pour it over the chocolate. Leave for 1 minute, then whisk until smooth.

    Whisk in praline paste, salt, vanilla, and orange zest only if using. Cool until barely lukewarm.

    Whip the remaining 180 ml cream with sugar to medium peaks.

    Fold one-third of the whipped cream into the chocolate mixture, then gently fold in the remainder.

    Divide between four glasses and refrigerate for at least 2 hours.

    Dust evenly with the cocoa and sprinkle with chopped hazelnuts. Add one mint leaf per serving only if using.
