Ingredients
- 1/2 cup black lentils
- 1-1/2 cups water
- 1 tablespoon soy sauce
- 1 teaspoon Worcestershire sauce
- 1 teaspoon caper juice
- 1/2 teaspoon red wine vinegar
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon pepper

- 1 (9 ounce) French bread baguette
- 2 to 3 tablespoons extra virgin olive oil
- 1 garlic clove, sliced in half
- 8 ounces whipped cream cheese
- Fresh minced chives, for garnish
Instructions
- 1 Cook the lentils according to the package directions. Drain any excess liquid and transfer them to a mixing bowl. Editor's Tip: Take care to cook the lentils properly. Mushy, overccoked lentils can lose their shape and texture, which will make the lentil caviar fall flat.
- 2 In a small bowl, whisk together the soy sauce, Worcestershire sauce, caper juice and red wine vinegar. Stir in the onion powder, garlic powder and pepper. Add the dressing to the lentils, and stir to coat them. Cover the bowl, and chill the lentils for at least one hour.
- 3 Meanwhile, preheat the oven to 350°F. Slice the baguette into 1/2-inch-thick slices. Arrange the slices on a sheet pan in a single layer, then drizzle them with olive oil on both sides. Bake the bread slices for 8 to 10 minutes or until they're lightly golden brown. Immediately rub the cut side of the garlic over the toasted bread. Let the bread cool.
- 4 When you're ready to serve the lentil caviar, spread a scant tablespoon of cream cheese onto each toasted baguette slice. Top each with a generous scoop of lentil caviar and a pinch of minced chives. Serve them immediately.
